Apricot Jam

Fresh apricots, vintage Pyrex and BBC's drama, Cranford (starring Judi Dench), playing in the distance - now that is my idea of a fun Summer evening. The kitchen faces West and the sunset was almost the same shade as my jam - simply gorgeous.
I make jam with Ball's No Cook Freezer Jam Fruit Pectin - the same way I made my strawberry jam here. Can jam be too good? We have eaten all of the strawberry jam that I made in June...three big batches of it! Next year, remind me how fast it goes!

Apricot Jam is my favourite. I love it on thick toast with lots of butter too. My grandmother used to make it for me and somehow it is one of my treasured memories. I've never made it; I've only ever made fig jam. A friend made us some delicious Satsuma Plum jam this year though and I have only one large jar left which I've hidden in the back of the cupboard!

Jam is so easy and fun to make with the pectin I described. You literally mix mashed room temperature fruit with sugar and the pectin mix. Stir for 3 minutes and put in jars. You are done! It tastes so fresh and delicious - I hope you try it sometime.
